The food safety laboratory participates in the accomplishment of the reference, research, monitoring and scientific and technical expertise missions of the Anses in its field of competence. It comprises two sites, one of which is located in Boulogne sur mer and specialises in the quality and safety of fishery and aquaculture products. The laboratory is involved in the identification, monitoring and risk analysis of the main food hazards, including those potentially transmitted by seafood products: - microbiological contaminants linked to raw materials, production conditions and food preparation (bacteria including Vibrio pathogens for humans, viruses, parasites); - physico-chemical hazards present in the environment or generated by agro-industrial processes (heavy metals, pesticides, marine biotoxins, histamine, microplastics) The Laboratory carries out the reference missions attributed by the competent authorities within the framework of the obligations of regulation 882/2004: - As a National Reference Laboratory (NRL) for marine biotoxins, heavy metals, pesticides, pesticide monoresidues, mycotoxins, histamine, Listeria monocytogenes, coagulase positive staphylococci including enterotoxins, viruses and vibrios. - As a European Union Reference Laboratory (LR-EU) for Listeria monocytogenes, coagulase-positive staphylococci - As a laboratory associated with the NRL for Salmonella (Anses Ploufragan-Plouzané-Niort), food-borne parasites (Anses Maisons-Alfort) and avian botulism (Anses Ploufragan-Plouzané-Niort) The research fields are the methodological development of relevant methods for the detection, identification and characterisation of these contaminants, and the understanding of the behaviour of microbial and chemical contaminants in seafood products.
